Today, I am going to show you how I made this simple oatmeal cookies. You do not need all purpose flour for this recipe.

Ingredients: (Large servings)

2 ripe bananas

1 stick of unsalted butter
1/2 cup of brown sugar

1/3 cup of white sugar
2 large eggs
1/2 tsp of nutmeg
1/2 tsp of baking soda
1/4 tsp of salt
1 cup of semi-sweet chocolate chips
1/2 tsp of vanilla extract

2 tablespoons of peanut butter

5 cups of oatmeal (2 cups blended and 3 unblended)

The first step to blend some oatmeal. I blended 2 cups of oatmeal for this recipe. In a mixing bowl, mash 2 bananas, after which you will add brown and white sugar. Add eggs and whisk.

Add the unsalted brown butter. Please watch my video on how to make chocolate chip cookies to see how I brown my butter.

Add vanilla extract, baking soda, nutmeg and salt to batter and mix. Gradually add the blended oatmeal to the batter and mix. Add 2 tablespoons of peanut butter and mix.

Add the blended oatmeal to the batter. Note that this is for a large serving. I used a total of 5 cups of oatmeal. 2 cups of blended oatmeal and 3 cups of unblended oatmeal.

Add chocolate chip to your batter and mix well.

Scoop the oatmeal dough one at a time on your baking pan. Make sure that there is enough space so that they can spread well in the oven. You can also use a to scoop the dough.

Make sure you preheat your oven for about 12 minutes before baking your cookies in 177 degrees Celsius or 350 degrees Fahrenheit for 11 minutes.

If you scooped your cookies into small sizes, make sure you bake for a shorter time. Perhaps 6-8 minutes.

Allow cookies to cool down for at least 10 minutes after baking.
