Hello everyone, I hope you tried my previous recipe on How to make Chocolate Chip Cookies. Today, I will show you how to make this Moist Banana Carrot Bread.
1 + 1/2 cups of flour
1 grated carrot
1/8 tsp of nutmeg
1/2 tsp of baking soda
1/2 tsp of baking powder
1/3 cup of milk
2 tablespoons of powdered milk
3/4 cup of oil
1/2 cup of walnut
3/4 cup of white sugar
1/2 tsp of vanilla extract
Mash the bananas in a mixing bowl, after which you will add the grated carrots. Make sure you do not mash or over mix the bananas to avoid a runny batter. Add eggs and whisk, I like to add the eggs, one at a time. Add three quarters cup of sugar and gradually mix. Add a third of a cup of liquid milk, three quarters cup of vegetable oil and half a teaspoon of vanilla extract.
Add half a teaspoon of baking powder and half a teaspoon of baking soda and mix. Add 2 tablespoons of powdered milk, this is optional though, but I like the extra flavor to my bread. Add nutmeg and mix.
Sieve the flour before pouring it into the batter and mix until well combined.
Add half a cup of walnuts. This step is optional, but I love walnuts, especially because of that crunchy texture. Pour the batter into the baking pan. In my video, I used a 9 by 5 loaf pan. Also remember to grease your baking pan with butter or oil.
I like to sprinkle a little bit of nutmeg on my batter before and after putting the sliced bananas on top. Add a little bit of walnuts again. Also make sure that to use less than 1 teaspoon of nutmeg in total.
Make sure you preheat your oven before baking in 177 degrees Celsius or 350 degrees Fahrenheit for 1 hour and 5 minutes.
Allow your bread to cool down for at least 15 minutes!
